Baked Murasaki Sweet Potatoes

Ingredients
  • 4 - 6 Murasaki Sweet Potatoes
Preparation
  • Preheat convection oven to 375°F.
  • Wash your Murasaki sweet potatoes.
  • Poke 3–4 holes in each sweet potato with a knife, fork, or potato poker. This allows the steam to vent so your sweet potato will not explode while cooking.
  • Place sweet potatoes directly on the oven racks. Depending on the size of your Murasaki, bake for 35–40 minutes. They are done when they pass the squish test. Wearing oven safe gloves, gently squeeze each sweet potato. If it is squishy and soft, then it is done.
  • Remove from oven and allow your baked sweet potato to cool slightly.
  • Enjoy by cutting the Murasaki open and fluffing the inside with a fork or simply taking a bite out of the sweet potato and eating them whole, skin and all.
